Think you're getting confused between different breeds of animals and collective nouns. If you want to use poultry and cattle signifying different types of poultry (e.g. Rhode Island Red chickens, and bantams) and various breeds of cows (e.g. Jersey, Belted Galloway), then you can't use herd and flock which are collective nouns for various animals, e.g. cows, and sheep or chickens (amongst other) respectively.
